Brickology Pizza

Brickology Pizza
Our next stop on our COVID-19 tour of food trucks is Brickology Pizza.  Brickology Pizza is a Fresno area food truck serving thin crust pizza slices. They post the pizzas of the day on a menu board. We ordered a slice of all three pizzas. The cheese slice was a pizza without tomato sauce, otherwise known as a "white pizza." The pepperoni was traditional with red sauce and cheese. The third pizza was mushroom, pepperoni, and sausage pizza, again with red sauce.

Brickology Pizza can be found at many of the usual food truck locations through either Facebook or Instagram.

Our three slices came to $15.12 including tax.

The Quirky Cafe

The Quirky Cafe

We continue our food truck odyssey during the COVID-19 pandemic with the Quirky Cafe food truck. The Quirky Cafe also has a restaurant in downtown Fresno, but we will visit there another time. The Quirky Cafe truck true to its name has a quirky menu. You can find the truck in the Fresno area on Instagram or Facebook.

We ordered the signature Hot Cheetos Burrito, a burrito with pulled pork, french fries, nacho cheese sauce and of course Hot Cheetos, all wrapped in a tortilla. The Hot Cheetos gave the burrito a crunch in contrast with the soft fries and pork.

Our second order was a PB&J Burger with strawberry jam, peanut butter, bacon,  and 1/4 pound beef patty on a brioche bun. If you like burgers with sweet relish, you will like the PB&J burger which is sweet from the jam and the brioche bun. We had potato salad as our side with the PB&J burger. The potato salad was creamy, almost like mashed potatoes.

Big Wagon

Big Wagon

We continue our food truck treasure hunt while restaurants are limited during the COVID-19 restrictions. This week is Big Wagon Tri-Tip and Chicken Too, located in the parking lot of Pardini's Catering and Banquet Hall, and The Annex Kitchen, at 2257 West Shaw Avenue in Fresno.

The truck owned and run by Pardini's is in its front parking lot. They are open Wednesday through Sunday from 11 a.m. until 7 p.m. except on Saturday when they stay open an additional half hour until 7:30 p.m.

We ordered a tri-tip chopped salad, a fried Mary's chicken sandwich, and a smoked tri-tip sandwich.

The salad was crisp and fresh, the chicken sandwich was crunchy and warm, and the tri-tip was nicely smokey.

The name Mary's comes from a local free range organic chicken producer Mary's Free Range Chickens. https://www.maryschickens.com/

For those of you new to or reading from outside California, tri-tip is a "triangular" cut of bottom sirloin beef that has become popular for barbeque in central California. Tri Tip was created in Santa Maria, California.

Sno Cafe

Sno Cafe

On a hot day with restaurants mostly limited to take out due to COVID-19, we decided to cool off at the Sno Cafe truck. The Sno Cafe specializes in southern style gourmet shaved ice. The menu features basic single flavor shaved ice,  signature shaved ice, stuffed shaved ice, and specials. They can be found with other food trucks in the Fresno area on Instagram.

We ordered a chocolate toffee truffle from the specials menu and a Georgia sunset from the signature menu. We ordered small, enough for us, but they also have a medium and a large size.
