Raphio Chocolate is a small gourmet chocolate factory that sells single origin bean-to-bar chococlate. The owner sells direct to retailers and only recently began selling to on-site customers who walk in. You can watch the chocolate being made in the back through a large glass window. The shop is located at 783 E. Barstow (in the strip mall at the corner of Barstow Avenue and First Avenue).
The bean-to-bar chocolates are made with minimal processing and additives such as sugar. The dark ones taste like the chocolate version of black coffee: strong and bold. The shop sells cocoa nibs and cocoa tea as well as chocolate bars.
Raphio Chocolate is open Monday through Saturday from 11:00 a.m. until 6:00 p.m.

On left is black refrigerator that keeps chocolate bars cool in Fresno's brutal summer heat. The wrappers in the glass display case are actually empty. Chocolate bars are bagged with a small ice pack to keep them from melting before a customer reaches home.
