Panderia Natalie is a Mexican fusion bakery in Fresno's Tower District at 935 East Olive Avenue. They feature Mexican and traditional American baked goods as well as bierrocks.

A bierrock is a pastry pocket sandwich made with a yeast dough and stuffed with savory fillings. The dish is common among the Volga German community in the United States and Argentina. It was brought to the United States in the 1870s by German Russian Mennonite immigrants who settled in the Fresno region. There are many alternate ways to spell bierrock.

Panderia Natalie has traditional German Russian Mennonite bierrocks made with ground beef and cabbage. They also have Mexican bierrocks unique to Panderia Natalie, whose savory filling is carne asada and peppers.

We bought both kinds of bierrocks as well as an assortment of baked goods. 

Panderia Natalie is open seven days a week. Monday through Friday from 5 a.m. until 7 p.m. Saturday from 5 a.m. until 6 p.m. and Sunday from 5 a.m. until 4 p.m.

Oreja ("Ear"). These are French pastries originally called Palmier ("Palm Tree Leaves") but widely adopted the Palmier's unique shape inspired all kinds of names: Elephant's Ear, Pig's Ear (Germany), Palm's Heart or French Hearts (throughout France), Palm Trees (Spain), Butterflies (China), Prussians (Switzerland), and Little Glasses or Eyeglasses (Greece, Catalonia, and Valencia). In Latin American countries, Palmiers are called "Ears."
