Tsuchiya Ramen serves tonkotsu style ramen, also known as hakata ramen, which is characterized by its milk-white soup made with pork bones and its fine noodles. This style of ramen is from the city of Fukuoka on the northern shore of Japan’s Kyushu Island.
You choose how firm your noodles are cooked to be--such as al dente (firm) to soft--when you order this ramen. The most common preference is for firm noodles, but you can order them as normal or soft too. Tsuchiya Ramen also offers the traditional second order of noodles if you have extra broth, or extra soup if you simply want a bit more. You can order numerous other ingredients for an extra fee such as sprouts, extra pork, beef balls, shrimp balls, wontons, spicy pork, corn, and more. Tsuchiya Ramen also has other dishes such as chicken katsu and rice bowls.
We ordered the hakata ramen with normal noodles and normal salt. This ramen comes with sliced pork and egg. We also ordered pot stickers as an appetizer.
Tsuchiya Ramen is located at 736 West Bullard Avenue at the corner of Palm in north Fresno. The restaurant is 'quick style' in that it serves a limited menu (ramen, plus some items such as the rice bowls), so your wait will not be lengthy. Tsuchiya Ramen is open seven days a week from 11 a.m. until 11 p.m.
