Ruta Cayejera
Our COVID-19 food truck tour continues this week with Ruta Cayejera, a truck featuring Mexican-themed breakfast food.
The menu changes from week to week but most of their dishes feature eggs.
We ordered the sweet potato chorizo hash with beans, eggs, avocado crema, pico de giallo, and Cotija cheese. We also ordered Longaniza sausage with beans, potatoes, eggs, onion, pico de giallo and Cotija cheese. The eggs were sunny side up and not overcooked as they were still a little runny.
The name Ruta Cayejera translates to Street Route in English. The truck can be found at many of the Fresno area food truck venues. They post their location on Instagram regularly.
Our two breakfasts came to $19.98 including tax.
